And who doesn’t want to sink their spoon into that slab of deliciousness?

Although this pie is raw and vegan, it’s not only for the health-food seekers. This dessert will impress any apple pie lover because it is so flavorful and full of texture. It also has the added benefit of being packed superfoods and other vitamin-rich goodies. 

And believe it or not, this is an easy raw apple pie recipe only requires a food processor to make. Once completed, the apple pie recipe is stored in the freezer until you are ready to devour it piece by piece. 

The crust in this pie is made by pulsing together dates, raw cashews, unsweetened coconut, fresh vanilla bean, and cinnamon until you have a crumbly, sticky mixture. Then, you’ll add the mixture to a tart pan and form it into a crust.

The apple layer is created by adding two cored honeycrisp (or other firm, sweet apple) to your food processor along with dates, half a banana, cinnamon, nutmeg & lemon juice. Blend into you get a smooth mixture. Then, you’ll cube one more apples and toss it with the apple-date mixture to create your apple pie filling.

To assemble your pie, you’ll fill your crust with the apple mixture and after an hour of set-time in your freezer, it’s time to sink your fork into the most delicious raw apple pie ever.

Ingredients
  

  • 1 Cup Cashews
  • 1 Cup Dried unsweetened Coconut
  • 1 Cup Dates, pitted
  • 1 Vanilla bean
  • 2 Tsp Ground cinnamon
  • 3 Medium Apples
  • 1/2 Medium Banana
  • 2 Tbsp Lemon juice
  • 1 Pinch Nutmeg

Instructions
 

  • Place all crust ingredients in the food processor. Process until the mixture sticks together and the dates are well processed.
  • Dump crust mixture into your pie crust/glass dish. Press the crust down firmly in your dish with your hands. (Crust is now done.)
  •  Roughly chop two apples, get rid of core/seeds. (Leave one apple alone)
  • Place all filling ingredients (EXCEPT THAT ONE APPLE, LEAVE ONE APPLE ALONE) in the food processor. Process until it's well mixed – a wettish mixture with a few small date chunks or apple peel that might not disappear.
  • Slice the last apple into thin slices or small chunks. Throw these apple slices/chunks into the wet appley mixture. Stir gently.
  • Dump appley-mixture (wet + sliced apples) on top of crust. Smooth out with spoon.
  • Cover and throw in freezer. Ready in an hour!
  • This raw apple pie recipe should always be kept in the freezer. (It'll get soggy if in the fridge.)
